Ingredients

  • 12 ounces pasta
  • 3 cups sliced mushrooms
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 cup cream or half-and-half
  • 1/3 cup grated parmesan
  • 1 tablespoon lemon juice
  • Parsley, salt, and black pepper

Method

  1. Cook pasta until just tender, reserving 1 cup of pasta water.
  2. Brown the mushrooms in butter over medium-high heat until their edges darken.
  3. Add garlic and cook for 30 seconds, then lower the heat.
  4. Stir in cream, parmesan, and a splash of pasta water until smooth.
  5. Toss in pasta, finish with lemon juice and parsley, and serve warm.

For a lighter version, replace half of the cream with more pasta water and add parmesan slowly so it melts evenly.
