Ingredients
- 6 bone-in chicken thighs
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 2 cloves garlic, grated
- 1 teaspoon dried oregano
- 1 teaspoon chopped rosemary
- 1 pound small potatoes
- Salt and black pepper
Method
- Heat the oven to 425 F.
- Toss chicken and potatoes with oil, lemon, garlic, herbs, salt, and pepper.
- Arrange everything on a sheet pan with the chicken skin side up.
- Roast until the chicken is browned and cooked through, about 35 minutes.
- Rest for 5 minutes before spooning pan juices over the top.
