Lemon Herb Roasted Chicken Thighs


 Lemon herb roasted chicken thighs are easy to prepare and hard to overcook. A bright marinade seasons the meat while high heat gives the skin a crisp finish.

Ingredients

  • 6 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, grated
  • 1 teaspoon dried oregano
  • 1 teaspoon chopped rosemary
  • 1 pound small potatoes
  • Salt and black pepper

Method

  1. Heat the oven to 425 F.
  2. Toss chicken and potatoes with oil, lemon, garlic, herbs, salt, and pepper.
  3. Arrange everything on a sheet pan with the chicken skin side up.
  4. Roast until the chicken is browned and cooked through, about 35 minutes.
  5. Rest for 5 minutes before spooning pan juices over the top.

Kitchen Notes

Cut larger potatoes in half so they cook at the same pace as the chicken.
