- 2 cups cooked rice
- 1 pound boneless chicken thighs or chicken breast, sliced

- 1 teaspoon grated garlic
- 1 cup shredded carrots
- 1 cucumber, sliced
- 2 scallions, thinly sliced
Method
- Whisk soy sauce, honey, vinegar, and garlic in a small bowl.
- Heat oil in a skillet over medium-high heat. Add chicken and cook until browned and fully cooked, about 6 to 8 minutes.
- Pour in the sauce and simmer for 1 to 2 minutes, turning the chicken until glossy.
- Divide rice among bowls. Add chicken, carrots, cucumber, and scallions.
- Spoon any remaining pan sauce over the bowls before serving.
