 Miso glazed salmon brings deep savory flavor to a fast dinner. The glaze caramelizes in the oven while cucumber rice keeps the plate fresh, cool, and balanced.

Ingredients

  • 2 salmon fillets
  • 1 tablespoon white miso
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 2 cups cooked rice
  • 1 cucumber, diced
  • 1 scallion, sliced
  • 1 teaspoon sesame seeds

Method

  1. Heat the oven to 400 F. Line a small baking sheet with parchment paper.
  2. Whisk miso, honey, soy sauce, and vinegar until smooth.
  3. Brush the glaze over salmon and bake for 10 to 12 minutes.
  4. Fold cucumber and scallion into warm rice.
  5. Serve salmon over the rice and finish with sesame seeds.

Kitchen Notes

Do not add extra salt before tasting because miso and soy sauce are already salty. The glaze also works well on roasted eggplant or tofu.
