Crispy Garlic Yogurt Potatoes


 These crispy garlic yogurt potatoes are golden on the outside, soft in the center, and finished with a cool, tangy sauce. They make a strong side dish, but they are satisfying enough to become a casual lunch with a salad.

Ingredients

  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup plain Greek yogurt
  • 1 small garlic clove, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped parsley or dill

Method

  1. Heat the oven to 425 F. Line a baking sheet with parchment paper.
  2. Toss potatoes with olive oil, paprika, salt, and pepper.
  3. Spread the potatoes cut side down and roast for 30 to 35 minutes, turning once near the end.
  4. Stir yogurt, garlic, lemon juice, and herbs in a bowl.
  5. Serve the hot potatoes with spoonfuls of garlic yogurt.

Kitchen Notes

If you want extra crunch, boil the potatoes for 8 minutes first, drain well, then rough up the edges before roasting. The yogurt sauce can be made a day ahead.
