Simple Lemon Loaf Cake for Beginners

This lemon loaf cake is bright, soft, and friendly for beginner bakers. The batter comes together in one bowl, and the finished cake has enough citrus flavor to feel special without needing complicated decoration.

Recipe Snapshot

  • Prep time: 15 minutes
  • Bake time: 45 to 55 minutes
  • Makes: 1 loaf
  • Best for: afternoon tea, dessert, weekend baking

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup plain yogurt
  • 1/3 cup neutral oil
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice
  • 1/2 cup powdered sugar, for glaze

Method

  1. Heat the oven to 350 F. Grease a loaf pan and line it with parchment paper.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. In another bowl, whisk sugar, eggs, yogurt, oil, lemon zest, and 2 tablespoons lemon juice.
  4. Fold the dry ingredients into the wet ingredients until just combined.
  5. Pour into the pan and bake for 45 to 55 minutes, until a toothpick comes out clean.
  6. Mix powdered sugar with the remaining lemon juice and drizzle over the cooled cake.

Kitchen Notes

Let the loaf cool before glazing so the topping sets cleanly. For deeper flavor, wrap the cooled cake and serve it the next day.
