 This vegetarian pantry noodle soup is built from ingredients many kitchens already have: noodles, broth, vegetables, and a few seasonings. It is warm, flexible, and useful on nights when you want comfort without a long shopping list.

Ingredients

  • 4 cups vegetable broth
  • 5 ounces noodles
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 1 carrot, thinly sliced
  • 1 teaspoon grated ginger
  • 2 scallions, sliced
  • Lime wedges, for serving

Method

  1. Bring vegetable broth, soy sauce, sesame oil, and ginger to a simmer.
  2. Add mushrooms and carrots. Cook for 5 minutes.
  3. Add noodles and cook according to package directions.
  4. Stir in spinach just before serving so it wilts gently.
  5. Top with scallions and serve with lime wedges.

Use this soup as a template. Add tofu for protein, chili oil for heat, or frozen peas for sweetness. Keep extra broth nearby because noodles absorb liquid as they sit.
